The Most Delicious Homemade Vitamin Boost

Green monsters, power-ups, lean mean green machine…Whatever you call them these smoothies are an energy bomb. The tell tale color comes from the main ingredient in the mix, 40% of the cocktail is spinach, or kale if it’s available. The rest of it is made up of fruit and a bit of liquid. Then we blend the elements together for a green drink.


Spinach is a superfood, full of antioxidants, vitamins and minerals. These don’t only battle daily fatigue, but they say it’s a big factor in preventing cancer. To be honest, I’m not really the fruit eating type, but at the beginning of the year, I always strive to be more healthy and live more consciously than the last year. So I thought a healthy dose of spinach and fruit would definitely improve my health and well being.

I’m not a huge fan of challenges, but in January I joined the Simple Green Smoothies New Year challenge. The task? Drink one big cup (5 dl) of a fresh green smoothie. At first I was intimidated, but believe me, they are actually delicious. Spinach has such a neutral taste that you can barely sense it, and instead we are treated to the interesting fruit combinations below.

The challenge was created by Jadah and Jen and they somehow made this month incredibly easy. Every week they sent a grocery list and tastier than tasty recipes. It was more than enough to buy all of the ingredients at the veggie stand once a week. In the beginning I prepared the fruits in the morning, but I quickly realized that doing this while getting my 4 kids ready was not a great idea. So I peeled all of the fruits except the bananas the day before, and stored them in a plastic tupperware in the fridge. In the morning, I simply poured everything into the blender and in a few minutes the smoothie was ready. My husband and daughter joined me in the challenge. We really enjoyed the whole thing and drank the deliciousness everyday. This was my breakfast every morning, and I got so full from the pulp that I didn’t even eat until noon. I started craving coffee and sweet things less. But the third week I caught a nasty stomach virus for a few days that seriously took me off my feet: I couldn’t drink or even prepare anything. The challenge lost traction for a bit. Undeterred, I began again and am continuing my tradition that started in January, because I don’t want to stop living a healthy life. Today I began my green smoothie regime again!
